These Turkey Oven Sandwiches are a great weeknight meal. We like to cook one pan the night we make them and save the other for the next night in the refrigerator. They can also be frozen for an easy meal in the further future. Distributing tomatoes and celery for these sandwiches is a great job for small hands and with a little help this dish can be ready in a jiffy!

Ingredients for Turkey Oven Sandwiches

  • 1 lb. ground turkey
  • Lawry’s seasoning  salt to taste
  • 1 t. oregano
  • 6 pita loaves, cut in half
  • 1/2 C. fresh tomatoes, diced
  • 1/2 C. celery, diced
  • 1 C. cheddar cheese, grated
  • 1 C. sour cream
  • 2/3 C. mayonaise
  • 2 T. finely diced onion

Instructions

STEP 1
Heat oven to 425°. Spray two 9″ x 13″ glass pans with nonstick spray and arrange six pita halves in each pan.

STEP 2
Cook ground turkey in a skillet over medium high heat, seasoning with Lawry’s and oregano, until meat is done. Set aside.

STEP 3
In a medium size bowl mix cheddar cheese, mayonnaise, sour cream and onion.

STEP 4
Evenly distribute turkey onto pitas. Carefully arrange tomatoes and celery on top of meat, again evenly distributing. Finally, using two spoons, top each pita with sour cream mixture.

STEP 5
At this point, pans can be covered with foil and refrigerated or frozen for future use. Or, cook pitas in oven for about 15 minutes, until middles are hot and topping and edges of pitas start to brown.
