Using refrigerated or frozen tortellini and homemade sauce that was canned in the summer offers a quick option for a fresh tasting, healthy meal. In a pinch, use your favorite store-bought tomato sauce.
Ingredients for Tortellini with Tomato Cream Sauce
- 1 clove garlic, minced
- 1 pint (2 cups) Sicilian Tomato Sauce or your favorite jarred tomato sauce
- 1/3 C cream or half and half
- Fresh grated parmesan cheese for garnish
- 1 lb refrigerated or frozen cheese tortellini, cooked to instructions and tossed with 1/2 T olive oil
Instructions
Simmer tomato sauce at medium heat with fresh minced garlic for about 15 minutes until slightly reduced. Add the cream or half and half to the sauce and mix thoroughly. Serve over cooked pasta with fresh parmesan cheese.
